Since I've gone back to stable versions on the watch and iOS, my connection seems to disconnect and generally be inconsistent. Is there any value with changing back to the beta versions? What about using the beta version iOS app and the stable watch version?

hi, bluetooth connection has been improved both on companion and watch OS. Using beta version and beta OS version will be better for you.
BTW, 490 beta version has been released in batches, with some features added or fixed. For more details, please refer to this post:http://forum.ticwear.com/viewtopic.php?f=11&t=2025
